4 x Atlantic Salmon Fillets

¼ pumpkin cut into thin wedges

1 cup slivered almonds

1 x bag of seasonal salad greens

Honey

EVOO

1 x avocado

Salt and Pepper

2 x lemons

A few sprigs of dill 

What to do:  

Preheat you oven to 180*. 

On a lined baking tray place the pumpkin wedges evenly spread out. Coat them in EVOO and then drizzle some honey over the top. Season the pumpkin with salt and pepper  and then sprinkle the almonds over the top. Pop the pumpkin in the oven and bake for about 40mins or until the pumpkin is roasted and has caramelised with the honey.  

On a separately lined baking tray, place the 4 pieces of salmon. Drizzle  some EVOO over the top and season with salt and pepper.  Once the pumpkin has about 20 mins left of cooking time – place the salmon in oven, it will typically take about 15-20 mins to cook.  

**If you’d prefer you can wrap the salmon individually in aluminium foil or pan fry it – whichever your preferred cooking method is fine.

 Once the Salmon and pumpkin are cooked remove them from the oven.  Serve each person a piece of salmon and some pumpkin. Then add to each plate a handful of greens and s. Drizzle EVOO over the greens and garnish with some dill and half a lemon. 

I also serve mine with some cooked brown rice - If you cook some extra salmon - this is an excellent way to double up for lunches as well!
