Plate sized pancakes .

Plate Sized Pancakes are a breakfast staple of mine. they're super simple to make, macro-nutrient balanced and very bloody tasty. You can make the toppings very fancy-smancy or just whack on some peanut butter and honey and be done with it. 

This recipe makes one pancake because I am selfish and only like to make pancakes for myself. For those of you who are much nicer than I am, just double, triple or even quadruple the recipe to make pancakes for other people. 

What You'll Need:

1 x Egg

1 x Small Banana 

4 x Tbsp Buckwheat Flour 

1/4 Cup Almond Milk

1 tsp Pure Maple Syrup

1/2 Tsp of Cinnamon

 

What To Do:

Mix all of the ingredients together in a mixing bowl ensuring that there are no flour lumps left over. I used a fork - but if you were making a double or triple batch of these then I'd recommend an electric mixer to make things easier. Once everything is mixed you should have something that resembles a pancake batter. 

Place a fry-pan {I use a crepe pan} on the stove over a medium heat and splash in some EVOO or coconut oil, you'll probably need about a teaspoon. Once the oil is hot, pour the contents of the mixing bowl {your pancake batter} in to the pan. It should spread out a bit so that size wise, it's similar to a medium sized plate. Let it cook on one side for a few minutes and once it looks brownish on the under side {use an egg flip to lift a bit and have a little looksie, the pancake shouldn't really have any runny bits on the top part either } - flip it and cook the other side. When your pancake is cooked transfer it to a plate. 

This is where the fun can really begin. There are no rules with pancake toppings - well I like to think there aren't. So do whatever tickles your fancy. The pancake pictured was topped with coconut yoghurt, a nut and seed mix , berries, kiwi and honey. When I'm in a rush - I'll smother it in PB and honey , whack a whole banana in there and wrap the pancake around the banana and eat it as I'm walking out the door. This usually ends with me getting honey all over my arm and work clothes so I'd suggest using a paper towel or something so that you don't end up like the little grublet that I am.
